Who loves tacos? This is my FAVORITE protein for tacos. It’s slightly smokey and slightly sweet, so it’s versatile enough to eat in tacos, burritos, salads, or with barbecue sauce on a bun. The best part is that it is only 3-4 ingredients!
This uses a boneless pork butt roast which is an inexpensive cut of meat, marbled with fat. The label might say something like pork butt, pork shoulder, pork roast or a combination of the two. I use boneless to make it easy, but if you end up with a bone-in pork shoulder, you can cook it the same way and just make sure to remove the bone and any bone fragments.
Make sure to remove the strings (if present) and trim off the large pieces of fat. They will just end up gunky and your meat will be greasy.
