These chocolate-y brownies are so moist and rich, and also full of vitamins and minerals! These are gluten free, and are not made with any refined grain flour. I’m totally okay with letting my kids have one or 2 of these every day. I use coconut sugar to sweeten these, but you can experiment with any sweetener you prefer, and you could even use less than the recipe indicates if you don’t eat much sugar.
This recipe could not be easier. I cook my medium-to-large sweet potato for about 3-5 minutes in the microwave and just mash with a fork before adding the rest of the ingredients. If you want to make these extra special, you could puree the sweet potato in a food processor, but it is not necessary.
While traditional brownies are delicious, boost of vitamins and minerals comes from the sweet potato, but also from the raw cacao powder, butter, eggs and coconut flour. Of course, you must add some mini chocolate chips, nuts, or whatever mix-ins your family prefers – especially if you are encouraging your little ones to eat them!
A note about coconut flour: Every brand of coconut flour is different – meaning some brands will absorb liquid more than others. If your brownies turn out too moist, you can add a little more coconut flour next time.
