Preheat oven to 350º.
Lightly grease an 8×8 glass baking dish with coconut oil or butter.
Wrap sweet potato in a paper towel and microwave on high for 3-5 minutes until completely soft. Cut open and allow to cool slightly.
Remove skin from sweet potato and mash well with a fork in a large bowl.
Add remaining ingredients and mix thoroughly with a silicone spatula.
Pour batter into dish and top with chocolate chips, if using.
Bake 30-35 minutes.
Allow to cool slightly before cutting.
